First, preheat your oven to 350F and grease and line a 9x9" baking sheet with parchment paper. Set aside.
Add chickpeas, cashew butter, egg + egg yolks, coconut sugar, maple syrup and vanilla bean paste to a food processor and blend until smooth, scraping down the sides as needed. Then add in the oat flour and kosher salt and blend again until just combined.
1 can chickpeas, ⅔ cup unsalted cashew butter, 1 large egg, 2 large egg yolks, ⅓ cup coconut sugar, 2 tbsp maple syrup, 1 tsp vanilla bean paste, ⅓ cup oat flour, ½ tsp kosher salt
Remove the blade from the food processor and use a spatula to fold in most, but not all dark chocolate chips & chopped graham crackers. Spread batter out evenly in the prepared baking dish. Transfer baking dish to the oven for 22 minutes.
1 ½ cups mini marshmallows, ½ cup dark chocolate chips, ½ cup roughly chopped graham crackers
Top the cooked blondies with a full and even layer of mini marshmallows, as well as the remaining chocolate chips. Switch your oven to broil and broil for 30-60 seconds, just until the marshmallows are toasted. Finally, garnish with the remaining chopped/crushed graham crackers. Let cool for at least one hour before cutting into 16 squares and enjoying.
