Matcha Chia Seed Pudding

This Matcha Chia Seed Pudding is about to become your new favorite meal prep breakfast (or snack!). It’s packed with antioxidants, fiber, and a gentle caffeine boost to keep you feeling energized without the jitters. Plus, all you need is 5 ingredients and 5 minutes to prep this for a nourishing grab-n-go-breakfast on busy mornings!

Ingredients

  • ¼ cup chia seeds
  • 1 tsp ceremonial grade matcha powder
  • pinch of kosher salt
  • 1 cup milk of choice (I like fairlife whole ultra-filtered milk)
  • 1-2 tsp maple syrup (optional, but encouraged)
  • splash of vanilla extract

Instructions

  • This recipe makes two servings, so you can either prep each serving in its own jar or make it in one larger jar. Assuming the former, add half of the chia seeds, matcha powder and salt to each jar. Stir to combine.
    ¼ cup chia seeds, 1 tsp ceremonial grade matcha powder, pinch of kosher salt
  • Pour in half of the milk, maple syrup and vanilla. Quickly stir until no chia clumps remain.
    1 cup milk of choice, 1-2 tsp maple syrup, splash of vanilla extract
  • Cover each jar with a lid and refrigerate for at least 3 hours, or overnight.
  • Serve with whatever toppings you prefer! I love greek yogurt and raspberries here. Enjoy!
