Lemon Protein Balls are a high protein, naturally sweetened snack or dessert that taste like a bite of Spring! Simple, no-bake, and only require 5 ingredients.

  • First, soak your dates in very hot water for about 10 minutes until softened. Then, drain the water. If they are very fresh and soft to begin with, you can skip this step.
  • Add all ingredients to a small food processor and blend until it forms a thick dough, with a few small pieces of cashew remaining.
  • Scoop out the dough by the tablespoon (I used a small cookie scoop to make them uniform). Use your hands to roll them into balls. Place on a parchment lined plate or in a food storage container. Refrigerate and enjoy as a healthy snack or dessert!
