Coconut Mango Overnight Oats

These Coconut Mango Overnight Oats are bringing tropical vacation vibes to your breakfast…even if you’re actually just rushing out the door for work. They’re perfectly thick and creamy, featuring a homemade coconut mango milk and chia seeds for an added fiber boost. Prep them at the start of the week for a filling, gluten free and vegan breakfast to grab-n-go on busy mornings!

  • First, add diced mango, coconut milk, maple syrup and vanilla to a small blender and blend until smooth. If you prefer things sweeter or are using an unsweetened protein powder, feel free to add more maple syrup to taste.
    1 ½ cups diced mango, 2 ⅔ cups light canned coconut milk, 1 tsp vanilla bean paste, 4 tsp maple syrup
  • In a large bowl, stir together the oats, protein powder, chia seeds, shredded coconut & salt. Then, add in the blended coconut mango mixture and stir until incorporated and no clumps remain.
    1 ⅓ cups rolled oats, 4 scoops vanilla protein powder, ¼ cup chia seeds, ¼ cup unsweetened shredded coconut, pinch of kosher salt
  • Divide amongst 4-5 jars or storage containers, cover with lids, and transfer to the fridge for at least 3 hours, or preferably overnight. When ready to eat, stir it up and optionally, top with more diced mango & shredded coconut. Enjoy!

*NOTE: I have only tested this recipe with a plant-based protein powder, specifically this one from Wellious. I always get great results with it, it's made with just a handful of simple ingredients and sweetened naturally with monk fruit. However, every protein powder performs differently and if you are using a whey-based protein powder, it may not absorb as much liquid. So you can expect your mango kefir overnight oats to be a bit "runnier."
