Cinnamon Date Energy Balls
These Cinnamon Date Energy Balls have all the amazing flavor of cinnamon rolls but are no-bake, vegan and so quick to make. A naturally sweet treat!

Ingredients

cup
raw walnuts
½
cup
pitted dates
(deglet or medjool, soaked if not already soft)
½
tbsp
vanilla extract
½
tbsp
cinnamon
(plus more to sprinkle on top)
2
tbsp
coconut butter, melted
Instructions
In a small food processor, add the walnuts and pulse until mostly crushed.
Add in the dates, vanilla and cinnamon and continue pulsing until a dough forms. If it's too dry, add 1/2 tbsp of water.
Scoop out the dough by the tbsp (or more if you prefer them larger). Roll into balls and place on parchment paper.**
Drizzle melted coconut butter on top and sprinkle with cinnamon,.
Store in the fridge in an airtight container.
Notes
**Your hands may get oily when rolling the balls. This is normal and is just from the natural oils that the nuts release.
