For the blackening seasoning (will make more than you need):
1tbsppaprika
¾tsponion powder
¾tspgarlic powder
½tspthyme
½tsp oregano
¼tspcayenne
1tspsalt
For the salmon:
olive oil
2filetsAlaskan Sockeye Salmon
blackening seasoningto taste
For the mango salsa:
2ripe mangosdiced
½red bell pepperdiced
½large shallotdiced (or about 1/4 cup red onion)
¼cupchopped cilantro
juice from 1 lime
salt to taste
Instructions
Mix together all blackening seasoning ingredients in a small bowl. Pat dry the salmon filets, coat with a bit of olive oil or cooking spray, and sprinkle on blackening seasoning, ensuring the top of the salmon is entirely coated. Pat the seasoning into the salmon slightly to help it stick.
·Preheat a small pan over medium heat. Add a bit of oil to coat the bottom of the pan. Once hot, add the salmon skin-side up and let cook for about 2 minutes. Gently flip and cook for 5 more minutes or until salmon is done to your preference (timing may vary depending on the size of your salmon).
Add all mango salsa ingredients to a large bowl and toss until combined. Layer the salsa over the blackened salmon and enjoy! Pairs well with rice for a full meal.
