Homemade Perfect Bars (PB&J)

These PB&J Homemade Perfect Bars are a dairy-free version of your favorite store-bought protein bars. No-bake, made with only a handful of whole food ingredients and one bowl.

Equipment

  • loaf pan
  • medium bowl

Ingredients

  • 1 cup smooth natural salted peanut butter
  • 2 tbsp honey (or maple syrup)
  • 4 scoops unflavored collagen peptides
  • ½ tsp vanilla extract
  • 1 tbsp coconut flour
  • ¼ cup freeze dried raspberries (or strawberries)

Instructions

  • Line a loaf pan with parchment paper
  • In a medium bowl, add all ingredients excepted the dried raspberries and mix until combined. You may have to use your hands because the dough will be thick.
  • Fold in the dried raspberries.
  • Press mixture into prepared loaf pan, using your hands or a spatula. Add extra dried raspberries and flaky sea salt on top if desired.
  • Place in the refrigerator for at least 1 hour before cutting. Cut into desired size pieces, I did about 7 long bars.
  • Store leftovers in an airtight container in the refrigerator.
