Blackened Salmon with Mango Salsa

This easy and healthy recipe is the best combo of spicy, fruity and fresh! Blackened salmon with mango salsa will be your new favorite summer dinner!

Ingredients

For the blackening seasoning (will make more than you need):

  • 1 tbsp paprika
  • ¾ tsp onion powder
  • ¾ tsp garlic powder
  • ½ tsp thyme
  • ½ tsp oregano
  • ¼ tsp cayenne
  • 1 tsp salt

For the salmon:

  • olive oil
  • 2 filets Alaskan Sockeye Salmon
  • blackening seasoning to taste

For the mango salsa:

  • 2 ripe mangos diced
  • ½ red bell pepper diced
  • ½ large shallot diced (or about 1/4 cup red onion)
  • ¼ cup chopped cilantro
  • juice from 1 lime
  • salt to taste

Instructions

  • Mix together all blackening seasoning ingredients in a small bowl. Pat dry the salmon filets, coat with a bit of olive oil or cooking spray, and sprinkle on blackening seasoning, ensuring the top of the salmon is entirely coated. Pat the seasoning into the salmon slightly to help it stick.
  • ·Preheat a small pan over medium heat. Add a bit of oil to coat the bottom of the pan. Once hot, add the salmon skin-side up and let cook for about 2 minutes. Gently flip and cook for 5 more minutes or until salmon is done to your preference (timing may vary depending on the size of your salmon).
  • Add all mango salsa ingredients to a large bowl and toss until combined. Layer the salsa over the blackened salmon and enjoy! Pairs well with rice for a full meal.
