Move aside avocado toast, we are on to bigger, better and more fun combinations! This is The Best Savory Toast Combo and it’s quickly become my new favorite breakfast. Filled with protein, healthy fats and complex carbs, this is a balanced and flavor-packed savory breakfast that you’re going to want to try.

Breakfast can get so boring sometimes, ya know!? There are so many sweet breakfast recipes out there, but not that many savory ones that go beyond your typical omelette or avocado toast. But, you’re in luck because now you know about The Best Savory Toast Combo! It’s a simple, flavorful and nourishing way to start your morning.

What Makes this The Best Savory Toast Combo?

I’m glad you asked! 😉 The reason this is The Best Savory Toast Combo is because it’s so unique and it just works! My inspiration for this recipe was Turkish Eggs, also known as Cilbir. Turkish Eggs are a Turkish breakfast dish consisting of a base of savory yogurt (yogurt mixed with garlic), topped with poached eggs and a spicy chili butter. My friend Meghan has a great recipe for Turkish Eggs Platter on her blog, if you want to go the traditional route!

So, imagine all of those Turkish Eggs components but on top of a hearty, golden piece of toast! I can’t say this is an authentic recipe because I did make some changes but it’s so delicious. For sake of simplicity, I did plain greek yogurt on top of the toast and did not add in garlic, but feel free to do so if you please! Then, I added some fresh arugula for some extra nutrients. Next, place on your poached egg and drizzle the top with a harissa tahini sauce, a bit of honey and season with fresh cracked salt and pepper.

When you bite in, the yolk of the poached egg will pop and create this lovely sauce for your toast! It’s truly an experience; each bite provides the perfect combination of tangy, spicy, sweet and savory. Not to mention, it is filled with protein from the yogurt (whole milk is the best!) and eggs, fiber from the toast and arugula, and healthy fats from the yogurt, egg yolk and tahini. A win-win-win-win…!

What You Need to Make The Best Savory Toast Combo

  • Bread: Any variety works! I chose to use a large slice of sprouted grain bread, but I bet this would taste amazing on some fresh sourdough.
  • Greek Yogurt: I highly recommend using plain, whole milk greek yogurt for it’s nutritional value, taste and consistency. If you’re dairy free, you can definitely substitute for your favorite dairy free/vegan brand.
  • Arugula: The most elite lettuce! It gives this toast a nice peppery kick. You can skip this if need be, or try substituting it for spinach.
  • Vinegar
  • Eggs: I always aim to buy pasture-raised eggs – the taste is unparalleled and the yolks are a deep orange color!
  • Harissa: Harissa can sometimes be hard to find – I recommend this brand of harissa that is sold at most grocery stores, or Trader Joe’s carries their own. If you’re in a pinch and don’t have any harissa, try using some sriracha or red pepper flakes instead.
  • Tahini
  • Raw Honey
  • Salt + Pepper

How Do I Make Poached Eggs?

Poached eggs are truly in a league of their own. Although this toast recipe will taste amazing no matter what style eggs you top it with (over easy, sunny-side-up, etc.), I think poached eggs are the best! You get that perfectly cooked white while still keeping the yolk nice and runny.

To be honest, I’m a newbie at making poached eggs! I’m still working on mastering it, but I’ve learned a few tips and tricks to help you successfully make poached eggs. First, the fresher the eggs the better! Second, crack your eggs over a fine mesh strainer to separate the whispy part of the egg whites. This helps the poached eggs have a more consistent, circular shape. Then, add your egg to a ramekin (or small bowl) to make it easier to gently place into the boiling water. One last tip…add about 1 tablespoon of vinegar to the water right before it boils. Some people suggest creating a vortex in the boiling water, but I did not do that.

Equipment

  • fine mesh strainer
  • small ramekins or bowls
  • medium pot
  • toaster

Ingredients

  • 1 slice bread (make this GF by substituting your favorite GF bread)

For the Poached Egg:

  • 1 egg
  • 1 tbsp vinegar (I used apple cider vinegar)

For the Toast Toppings:

  • ½ tbsp tahini
  • ½ tbsp harissa
  • fresh lemon juice to taste
  • plain greek yogurt (make this dairy free by substituting your favorite DF yogurt)
  • arugula
  • raw honey
  • salt + pepper

Instructions

  • Bring a medium pot of water to a boil.
  • Meanwhile, crack your egg into a small mesh strainer and let the whispy part of the egg whites fall through. Discard it, or save it to use in another recipe later. Transfer the egg to a small ramekin or bowl.
  • Once the water is almost boiling, add in the vinegar. When it's boiling, turn the heat to low and gently drop the egg into the water. Let the egg cook for 3 minutes.
  • While the egg is cooking, pop a slice of bread into the toaster. Also, mix together the harissa, tahini and lemon juice in a small bowl.
  • Remove the egg with a slotted spoon and place it onto a plate lined with paper towel to absorb the extra water.
  • Assemble the toast. Start by spreading a thick layer of yogurt over the bread. Then add arugula, poached egg, a drizzle of harissa tahini sauce and honey. Season with salt and pepper.
