My love and appreciation for chia pudding is truly growing by the day. Not only is it SO easy and quick to prep, but it will also help you hit your fiber goals so easily! One serving of chia seeds (2 tbsp) has 10g of fiber, which is 40% of the RDV for women under 50. And when you transform them into this summer-y peaches & cream chia pudding with yogurt…it’s not only nutritious, but it’s also delicious and totally crave-able.

This recipe features a homemade peach milk which offers that quintessential peaches and cream flavor — partly tart and sweet, partly creamy, and all things yum. This is what the chia seeds get soaked in, then they’re layered with greek yogurt for extra protein, and a peach compote if you’re feeling fancy! It’s like dessert for breakfast…truly my dream.

What You Need to Make this Peaches & Cream Chia Pudding with Yogurt

For the Peaches & Cream Chia Pudding:

  • Chia Seeds: Chia seeds are a great source of fiber, protein and antioxidants. They will soak up all that peach milk and turn into a gel-like consistency.
  • Yellow Peach: Try to pick one that’s super ripe and juicy for maximum peach flavor! No need to peel it — just pit and cube, then blend with the milk.
  • Milk: Feel free to use whatever milk you prefer, but I like using either 2% or fairlife milk for added protein. Please note that if you use canned coconut milk, your chia pudding may end up thicker.
  • Vanilla Protein Powder: My favorite is this vegan one from Wellious, which is made from simple ingredients, sweetened naturally with monkfruit and doesn’t have a chalky texture. You can omit this and the chia pudding will still be great, although slightly thinner consistency.
  • Maple Syrup: To sweeten up this chia pudding and enhance the peach flavor, add in a bit of maple syrup. Feel free to adjust the amount to your preference.
  • Vanilla Extract: Duh!
  • Kosher Salt: A small amount of kosher salt goes a long way to enhance the flavors…even in sweet recipes!

For Assembling the Parfaits:

  • Greek Yogurt: This puts the “cream” in peaches & cream, while also boosting the protein content of this recipe! I highly recommend full-fat plain greek yogurt or skyr.
  • Peach Compote or Jam: I happened to have leftover peach compote, so I layered that in here for extra peach flavor and sweetness. I don’t have the exact measurements for this, but a rough how-to is listed in the notes of the recipe card. You can also use a store-bought peach jam for convenience!
  • Crushed Graham Crackers: Optional, but makes for a beautiful and crunchy finishing touch to this peaches and cream chia pudding. I used Simple Mills Honey Cinnamon Sweet Thins to keep this gluten free.

How To Make this Peaches & Cream Chia Pudding with Yogurt

Blend the Peach Milk:

Add cubed peach, milk, protein powder, maple syrup, vanilla & salt to a small blender (or use an immersion blender) and blend until smooth. Taste and adjust the amount of maple syrup to your liking.

Stir in Chia Seeds & Refrigerate:

Next, pour this peach milk into an airtight container/jar and stir in the chia seeds. Cover with a lid and refrigerate for at least 3 hours, or preferably overnight.

Layer with Yogurt & Peach Compote:

Assemble the parfaits with a layer of the peaches & cream chia pudding, greek yogurt and peach compote/jam. Repeat with as many layers as you’d like, then finish off with a sprinkle of crushed graham crackers. Enjoy!

Can I Make this Chia Pudding Vegan/Dairy Free?

To make this peaches & cream chia pudding vegan/dairy free, all you need to do is substitute a non-dairy milk and a thick, greek-style dairy free yogurt (I like Siggi’s Plant-Based). The only milk I would recommend steering clear from is canned coconut milk as it usually makes the chia pudding reallllyyy thick! Otherwise, this recipe will work great with almond, oat, cashew milk, etc.

Can I Meal Prep this Peaches & Cream Chia Pudding?

Absolutely! This Peaches & Cream Chia Pudding with Yogurt is perfect as a meal prep breakfast option. The chia seeds need to soak for at least 3 hours, but preferably overnight. And they can continue to sit in the fridge, soaking, for up to 4 days. You may notice that the chia pudding continues to thicken up and if it ever gets too thick you can always thin it out with a bit more milk or water. I would wait to assemble the parfaits until you’re ready to eat!

  • 1 cup milk of choice (I used 2%)
  • 1 scoop vegan vanilla protein powder (36g, optional)*
  • 2 tsp maple syrup
  • ½ tsp vanilla extract
  • pinch of kosher salt
  • ¼ cup chia seeds

Notes

*NOTE: The protein powder that I recommend is this one from Wellious – it’s made with simple ingredients and doesn’t have a chalky texture. It’s also sweetened naturally with monkfruit. You can omit the protein powder entirely, however the texture of the chia pudding will be slightly thinner.
**NOTE: To make an easy peach compote, just peel and cube a few peaches, then add them to a pot along with granulated/cane sugar, a splash of lemon/lime juice and a bit of cornstarch to thicken it up. Bring it to medium heat, stir, and let cook for about 5 minutes. Then, reduce heat to medium low until the peaches are nice and soft and the compote has thickened. Finally, stir in a bit of vanilla extract and let it cool down. Store in an airtight container in the fridge.
