Plus, all you need is 5 ingredients and 5 minutes to prep this for a nourishing grab-n-go-breakfast on busy mornings!

At the time I’m writing this, there’s a major egg shortage going on here in the US. I think it’s due to some sort of flu affecting the hens. So eggs are hard to come by, and if you can find them, they’re probably super expensive. I’ll pass on a $10 carton of eggs, thx. Considering eggs are almost always my breakfast of choice, I had to get creative and switch it up. Enter: this matcha chia seed pudding!
I can’t believe it took me this long to combine two of my favorite things…matcha lattes and chia pudding. Boy was I missing out! The first bite of this matcha chia seed pudding transported me all the way back to our time honeymooning in Tokyo. That earthy matcha flavor pairs so well with the creamy milk and the vanilla extract! Plus, the chia seeds add a good boost of plant-based protein and fiber to make this meal balanced and filling.
It feels silly to even be writing a blog post for this recipe, because it’s so incredibly easy. I’m talking 5 ingredients and 5 minutes to make type of easy. But, I know we’re all busy and can appreciate a simple yet delicious and nourishing meal prep breakfast. So here ya go! I hope you love this matcha chia pudding 🙂

What You Need to Make this Matcha Chia Seed Pudding
- Chia Seeds: Chia seeds are a great source of fiber, protein and antioxidants. They will soak up all that milk mixture and turn into a gel-like consistency.
- Ceremonial Grade Matcha Powder: Ceremonial grade is higher quality than culinary, resulting in a more appetizing and less bitter flavor. My two favorite brands at the moment are Pique and Golde!
- Kosher Salt: A small amount of kosher salt goes a long way to enhance the flavors…even in sweet recipes!
- Milk: Feel free to us whatever milk you prefer, but I like using fairlife whole ultra-filtered milk because it has 50% more protein and 50% less sugar than regular milk.
- Maple Syrup: Optionally, sweeten this chia pudding with a small amount of maple syrup.
- Vanilla Extract: I truly believe that you can’t make anything matcha flavored without adding in some vanilla. It’s the perfect pairing!
How To Make this Matcha Chia Pudding
Mix together Dry Ingredients:
This recipe makes two small servings, so you can either prep each serving in its own jar or make it in one larger jar. Assuming the former, add half of the chia seeds, matcha powder and salt to each jar. Stir to combine.
Add in Remaining Ingredients & Stir:
Next, pour in half of the milk, maple syrup and vanilla. Quickly stir until no chia clumps remain.

Let Chia Pudding Soak Overnight:
Finally, cover each jar with a lid and refrigerate for at least 3 hours, or overnight. Serve with whatever toppings you prefer! I love greek yogurt and raspberries here. Enjoy!
Can I Make this Chia Pudding Vegan/Dairy Free?
Absolutely! To make this matcha chia seed pudding vegan/dairy free, just swap in your favorite non-dairy milk. I’d recommend one that’s unsweetened, but it’s okay if it’s vanilla flavored! Almond milk, cashew milk, oat milk or even coconut milk would all be great here.
What Brand of Matcha Powder do you Recommend?
I highly recommend using ceremonial grade matcha powder instead of culinary grade because it’s higher quality, less bitter and has less of a gritty texture. Any brand will work here, but the ones that I use the most for my daily matcha lattes are Golde and Pique. Each are great in their own respect, just depends on your budget!

Can I Meal Prep this Matcha Chia Seed Pudding?
Of course! This matcha chia seed pudding is meant to be meal prepped for an easy grab-n-go breakfast on busy weekday mornings. It does need to soak for at least 3 hours, but can be stored in the fridge for up to 4 days if you want to prep an even larger batch. You will notice that the chia seeds start to expand more, and as a result the chia pudding thickens up as it continues to sit. If it’s ever too thick for you, you can always add a bit more milk or water right before you’re ready to eat it.

- 1 cup milk of choice (I like fairlife whole ultra-filtered milk)
- 1-2 tsp maple syrup (optional, but encouraged)
- splash of vanilla extract
