Homemade Perfect Bars (PB&J)

WHAT'S SPECIAL

All the nostalgia of a PB&J in an easy, no-bake protein bar!

These Homemade Perfect Bars are for when you want to feel like a kid again but also need to fuel up like an adult with adequate protein and fat! They taste shockingly like the store-bought Perfect Bars, are no-bake, require only a handful of whole food ingredients and one bowl.

PB&J Homemade Perfect Bars

I always used to buy Perfect Bars at the grocery store for a quick yet nourishing meal or snack during college. Unfortunately, most of their flavors do contain dairy which doesn’t fare well with me anymore. So, I created my own recipe that tastes IDENTICAL to them but made without dairy. I am completely hooked on these PB&J Homemade Perfect Pars and will never go back to store-bought! I think you’ll feel the same way once you try them.

When you first bite into these Homemade Perfect Bars, you’re going to say to yourself “there’s no way these could possibly be healthy” because they taste like pure peanut butter bliss. But friends, they are packed with healthy fats from the peanut butter, loaded with protein from the collagen (hi strong hair, skin & nails!) and are only lightly sweetened with a touch of honey. Can we call that a win-win-win?!

What You Need To Make Homemade Perfect Bars

  • Peanut Butter: Make sure to use one that is natural (only made with peanuts and salt). If you have a peanut allergy you can substitute this with any other nut/seed butter.
  • Honey: Honey complements these Homemade Perfect Bars so well. You can also use maple syrup or your preferred liquid sweetener.
  • Collagen Peptides: We use flavorless collagen peptides in here for protein which dissolve right in without changing the taste or texture of the bars! Collagen has also been said to be great for hair, skin and nail growth/strength.
  • Coconut Flour: Coconut flour is very absorbent so it helps dry out the bars enough so that they hold their own. I don’t recommend trying to substitute this with any other flour.
  • Freeze Dried Raspberries: Raspberry jam was always my personal favorite so that’s what I chose to use here. You can also use freeze dried strawberries or blueberries instead.
  • Flaky Sea Salt: Optional, for topping the bars.

Equipment

  • loaf pan
  • medium bowl

Ingredients

  • 1 cup smooth natural salted peanut butter
  • 2 tbsp honey (or maple syrup)
  • 4 scoops unflavored collagen peptides
  • ½ tsp vanilla extract
  • 1 tbsp coconut flour
  • ¼ cup freeze dried raspberries (or strawberries)

Instructions

  • Line a loaf pan with parchment paper
  • In a medium bowl, add all ingredients excepted the dried raspberries and mix until combined. You may have to use your hands because the dough will be thick.

  • Press mixture into prepared loaf pan, using your hands or a spatula. Add extra dried raspberries and flaky sea salt on top if desired.
  • Place in the refrigerator for at least 1 hour before cutting. Cut into desired size pieces, I did about 7 long bars.

Recipe looks good but it would help to know what 4 scoops is equal to as the collagen I bought doesn’t even have a scooper and that may vary depending on whose collagen you buy. Thanks!

    1. Hi David, sorry about that! I typically use Vital Proteins collagen and they used to sell it with a scooper but have since gotten rid of it. 4 scoops is equivalent to about 8 tbsp or 1/2 cup. Hope that helps!
