This Healthy Mug Brownie is the easiest chocolate dessert recipe! It comes together in under 2 minutes in the microwave and makes just enough for one person, so you don’t have to worry about sharing. Made with simple, healthy ingredients that you probably already have on hand, this mug cake is paleo, gluten, dairy and grain-free!
Let’s face it, we’ve all had a moment where we wanted something sweet to cap off the night but we didn’t have the time or energy to make a full batch of baked goods. That happens to me more often than I’d like to admit. That’s where this Healthy Mug Brownie comes in! It’s single-serve and incredibly easy without sacrificing in the flavor department.
Sharing desserts, 0r food in general, is simply not in my nature. Especially when it tastes as good as this Healthy Mug Brownie does. Another great part about single-serve recipes is that you can switch up your desserts every night rather than being tied down to that batch of cookies you’re trying to get through. I don’t know about you but I need some variety in my life. We have to keep it interesting around here, folks.
This Healthy Mug Brownie is decadent yet made with nourishing ingredients. I like to add fresh raspberries in the batter and on top because I think it really brings this Mug Brownie to the next level. But, if you just want to go full-chocolate mode, feel free to omit the raspberries. Or, you can substitute them with your preferred fruit.
What You Need To Make a Healthy Mug Brownie
- Coconut Oil: I use refined coconut oil here, but any neutral-flavored oil will work.
- Egg: I always use pasture-raised and have not tried any vegan substitutes yet.
- Maple Syrup: Maple syrup is one of my go-to liquid sweeteners! I keep the sugar pretty low in this recipe because I don’t like overly sweet desserts, but feel free to increase the amount to your personal preference.
- Almond Flour: This gluten & grain-free flour keeps the mug cake so moist.
- Cacao Powder: Cacao powder is less processed than cocoa powder however they can be used interchangeably in this recipe. Just make sure it’s unsweetened.
- Vanilla: It’s an essential in any baked good!
- Baking Soda: This helps the mug brownie rise and be fluffy.
- Dairy-Free Chocolate Chips: Dark chocolate is always my go-to, but go with whatever variety makes your heart happy! Some dairy-free chocolate chip brands that I like are Trader Joe’s, Enjoy Life and Hu.
- Fresh Raspberries (optional): Raspberry + chocolate is such a decadent combo, but feel free to omit or substitute with your preferred fruit.
