Creamy and dreamy sauce to quickly & easily level up any meal!

This vegan Dill Avocado Cream Sauce is a luxurious way to use up leftover fresh dill! It’s a flavor explosion that comes close to beating out pesto, in my opinion. Add it to some cauliflower gnocchi or pasta for a super easy weeknight dinner! Or, use it as dip for your favorite veggies, pretzels or crackers. It would even work great as a dressing to top off a hearty salad or bowl.

I can’t be the only one who ALWAYS buys fresh herbs for a recipe and then has a ton of leftovers that they don’t know what to do with. Instead of letting them go to waste, I created this Dill Avocado Cream Sauce to solve that problem! Now, it’s part of the weekly rotation at my house and really isn’t that much more difficult than opening a jar of store-bought pasta sauce.

If you’re wondering “what does Dill Avocado Cream Sauce taste like?”, well the answer is amazing. But seriously, it’s reminiscent of pesto in terms of the ingredients, except we substitute dill for the basil and add avocado to make it so creamy and dreamy. It’s boyfriend approved too, which is the ultimate stamp of approval.

What You Need To Make Dill Avocado Cream Sauce

  • Fresh Dill: I’m newly obsessed with this herb! Find it in the produce section of any grocery store.
  • Raw Cashews: You can also use pine nuts, almonds, pumpkin seeds…really anything!
  • Garlic: What good is a sauce without some garlicky flavor!?
  • Lemon Juice: The citrus balances out the dill & garlic for a well-rounded sauce.
  • Avocado: The key ingredient that makes this sauce so creamy. Plus, it adds some awesome healthy-fats and other nutrients.
  • Water: The amount of water you add will determine the consistency of this sauce. If you prefer a thinner sauce, add more water and if you want it thicker like a dip then add less.
  • Cumin, red pepper flakes, salt & pepper: Spices that I add to practically every savory dish. Measure with your heart (or your tastebuds) here.

So, What Should I Serve Dill Avocado Cream Sauce With?

With a fresh and flavorful sauce, the options are really endless. Here are a few suggestions:

  • Cauliflower Gnocchi or Pasta: As you can tell from the photos, that’s how I chose to use it! Just cook your pasta or gnocchi to al-dente, then add in the Dill Avocado Cream Sauce and toss to combine. Let it warm up and dive in.
  • Crackers, Pretzels or Chopped Veggies: By adding less water you can create a thicker sauce that will be more like a dip! Then serve it on a charcuterie board with some crackers, pretzels or chopped veggies. It’s a great alternative to store-bought dips which can be filled with some wild ingredients.
  • Salad or Nourish Bowl: When you add more water, this sauce will be thin enough to act as a dressing for your favorite salad or nourish bowl. It will instantly give your meal an extra boost of flavor!

Dill Avocado Cream Sauce

This vegan Dill Avocado Cream Sauce is the best way to use up leftover fresh dill! Pair it with pasta, use as a dip or a dressing for quick and easy flavor.

Ingredients

  • 1 cup fresh dill, packed (no need to remove stems)
  • ¼ cup raw cashews (sub nut or seed of choice)
  • 1-2 cloves garlic
  • juice from half a lemon (about 1 tbsp)
  • â…“ cup avocado (about ¾ of an avocado)
  • ½ cup + 2 tbsp water (adjust based on how thick you want it)
  • dash of cumin + red pepper flakes
  • salt + pepper (to taste)

Instructions

  • Add all ingredients except for the weater and avocado to a small food processor. Blend, scraping down the sides often, until finely chopped.
  • Add in the avocado and water and blend until smooth.
  • Serve it with cauliflower gnocchi, GF pasta, as a dip or as a salad dressing!
