These Cinnamon Date Energy Balls have all the amazing flavor of cinnamon rolls but are no-bake, vegan and so quick to make. Dates give them the best natural sweetness and walnuts round it out by adding texture and healthy fats. It’s as simple as throwing a handful of ingredients into a food processor and rolling into balls! Then, store them in the fridge and grab one whenever you need a healthy sweet treat.

There is something so special and cozy about cinnamon rolls. But let’s be honest, who has the time to make them!? That’s why these Cinnamon Date Energy Balls are so awesome…they taste just like the real-deal but don’t require any rising or even cooking. If you’re impatient like me, you can eat the dough straight from the food processor and not worry about getting sick. Not to mention, they are made with minimal ingredients that you can actually pronounce, so really its a win-win.

Don’t forget about the icing! That might just be the best part of a cinnamon roll. For these Cinnamon Date Energy Balls, I keep it super simple by just drizzling on some melted coconut butter (NOT to be confused with coconut oil). The subtle sweetness & nutty flavor complements the Cinnamon Date Energy Balls so well without being overpowering. It’s an optional, but highly recommended step!

What You Need To Make These Cinnamon Date Energy Balls

  • Walnuts: Raw walnuts help keep these balls together while also giving a great flavor and texture. You can try substituting with raw cashews or almonds.
  • Dates: I am using deglet door dates but medjool will also work. If they are not soft already, soak them in very hot water for 10 minutes.
  • Vanilla Extract: Don’t be shy with this!
  • Cinnamon: I think that’s a given.
  • Coconut Butter: Also known as Coconut Manna, it is made from the whole coconut. To melt it without burning it, submerge the sealed jar in a hot water bath until softened.

Tools Helpful for Making These Cinnamon Date Energy Balls

  • Food Processor: Since this is a small-batch recipe, it works perfectly in the mini Kitchen-Aid Food Processor . If you’re using a larger food processor, you may want to double the recipe so that there are enough ingredients for it to chop properly.
  • Cookie Scoop: You will need a small cookie scoop or you can scoop it out using a tablespoon or regular spoon.

Cinnamon Date Energy Balls

These Cinnamon Date Energy Balls have all the amazing flavor of cinnamon rolls but are no-bake, vegan and so quick to make. A naturally sweet treat!

Equipment

Ingredients

  • 1 cup raw walnuts
  • ½ cup pitted dates (deglet or medjool, soaked if not already soft)
  • ½ tbsp vanilla extract
  • ½ tbsp cinnamon (plus more to sprinkle on top)
  • 2 tbsp coconut butter, melted

Instructions

  • In a small food processor, add the walnuts and pulse until mostly crushed.
  • Add in the dates, vanilla and cinnamon and continue pulsing until a dough forms. If it's too dry, add 1/2 tbsp of water.
  • Scoop out the dough by the tbsp (or more if you prefer them larger). Roll into balls and place on parchment paper.**
  • Drizzle melted coconut butter on top and sprinkle with cinnamon,.
  • Store in the fridge in an airtight container.

Notes

**Your hands may get oily when rolling the balls. This is normal and is just from the natural oils that the nuts release.
