I have this unspoken rule that if there’s a soft pretzel on the menu, I’m ordering it. Partly because it feels so nostalgic to my time studying abroad in Vienna, Austria, and partly because they’re just so dang delicious. And now that we’re approaching cozy weather, Oktoberfest, and football season, it felt like the perfect time to create my own homemade soft pretzel bites recipe.

These easy pretzel bites don’t require any yeast, and instead use the viral two ingredient dough. This greek yogurt and self-rising flour combination can truly do it all — pizza dough, bagels, and now…pretzel bites! I love how quick these pretzel bites come together and how the greek yogurt naturally adds protein and probiotics.

After they go for a dip in a baking soda bath, they’re baked until nice and golden and then paired alongside a higher protein honey mustard dipping sauce. These always get devoured so quickly in our house, I ought to just double the recipe every time I make them. I hope you love them as much as we do 🙂

What You Need to Make Easy Soft Pretzel Bites (Without Yeast)

For the Pretzel Bites:

  • AP Flour: The base of these pretzel bites is AP flour. I have tested this recipe with gluten free 1-to-1 flour (that includes xanthan gum) and it works, but the flavor/texture is not as great.
  • Baking Powder: Baking powder will help them puff up!
  • Kosher Salt: To enhance the flavor.
  • Greek Yogurt or Skyr: These soft pretzel bites are naturally higher in protein, thanks to greek yogurt. I highly recommend using full-fat plain for the best results.
  • Water: Before baking, the pretzel bites go for a dip in a water & baking soda bath.
  • Baking Soda: The baking soda raises the pH, which speeds up the Maillard reaction and in turn, gives pretzels that deep brown, glossy crust and distinctive flavor. Don’t skip it!
  • Pretzel Salt: Pretzel salt has large, coarse crystals that don’t dissolve quickly. They can be tricky to find in stores, so you may need to order on Amazon.

For the Honey Mustard Dipping Sauce:

  • Greek Yogurt or Skyr: This is the trick to boosting the volume and protein of the honey mustard dipping sauce. Once again, I recommend full-fat plain.
  • Dijon & Yellow Mustard: Dijon has a sharper, spicier flavor while yellow mustard is a bit milder, so I like to use an equal blend of both for a balanced dipping sauce.
  • Garlic Powder & Kosher Salt: Just a dash of each, to add a bit more flavor.

How To Make these Two Ingredient Dough Pretzel Bites

Preheat Oven:

First, preheat your oven to 425F and line a baking sheet with a silicone baking mat or parchment paper. Set aside.

Mix together Pretzel Dough:

In a medium bowl, stir together the flour, baking powder & kosher salt. Then, add in the greek yogurt and stir with a spatula until a shaggy dough forms. Switch to your hands to finish stirring/kneading until a smooth dough forms.

Cut Dough into 24 Pretzel Bites:

Next, turn dough out onto a clean work surface and divide it into four equal portions. Roll out each piece into roughly a 7.5″ log, then use a knife or bench scraper to cut it into 6 pieces. You will get 24 total pretzel bites.

Boil Pretzel Bites:

Add water and baking soda to a large pot and stir to dissolve. Bring up to a gentle boil. Then, add 6 of the pretzel bites at a time and let boil for only 10-15 seconds. Remove them from the pot with a slotted spoon and transfer to the prepared baking sheet. Immediately sprinkle with pretzel salt, then repeat with the remaining pretzel bites.

Bake Pretzel Bites & Prepare Honey Mustard Dipping Sauce:

Transfer pretzel bites to the oven to bake for 13-15 minutes, or until they’re a deep golden brown color. Meanwhile, prepare the honey mustard dipping sauce by mixing together all ingredients in a small bowl. Allow the pretzel bites to cool down for a few minutes before enjoying.

Substitution FAQs:

  • Can I make these pretzel bites gluten free? I have tried this recipe with gluten free 1-to-1 flour (a blend that contains xanthan gum) and while it does work, the taste and texture are noticeably different.
  • Can I use low-fat or non-fat greek yogurt instead? Those will both work, as long as they’re plain. However, I much prefer the rich flavor of full-fat greek yogurt or skyr.
  • Where can I buy pretzel salt? What can I use instead? I couldn’t find it at any of my local grocery stores, so I ordered this one on Amazon. In a pinch, you can substitute coarse kosher salt.

How Should I Store Leftover Pretzel Bites & Honey Mustard Dipping Sauce?

It’s pretty difficult to not eat all of these soft pretzel bites in one sitting, but in the rare case that you have leftovers, allow them to cool down completely and then transfer to an airtight container and store at room temperature for 1 day. They will dry out, so I recommend microwaving them briefly to revive them. The honey mustard dipping sauce should be stored in an airtight container in the fridge.
